I'm not 100% sure on "best-practices", but what you have done there is pretty close to what I would have done. The only difference might have been to just use the <span> that is before Dear to wrap around the other two <span class="eloquaemail"> tags. That theoretically should have fixed the issue, and wouldn't have required you to add the style="" to the two field merges. Glad you got it worked out!
