In your HTML code the name of the field is "preference" and in the form submission data the field "preferences" is blank. Could that missing "s" cause the field to show as undefined?

The HTML name in eloqua is "preference" I just typed the Field Label in Eloqua as "Prefences" to make it more understandable for end users receiving the form data. I don't think that should be an issue.
